High density planting with resulting lower yield per vine enables our Cabernet vines to ripen evenly and avoid problems with lack of phenolic ripeness, i.e. the flavours are ready by the time the sugars are high.
The wine is made to be medium bodied in weight, fine and with impressive colour. Aromas and flavours will typically be dense with cassis and an edge of red fruits. We aim for oak tannins to be dusty & fine and grape tannins ripe and balanced
Acidity is balanced but high enough to sustain the wine through 10-15 years and we expect ink, truffle, and cigar-box notes to develop with age.
The wine shows a distinctive cool-climate elegance when set against its cousins from more northern parts of Margaret River, whilst still recognisable as coming from this outstanding Cabernet region.
